FARMINGTON – A slice of Mediterranean life will be moving into town this summer with the opening of White Fox Taverna- a Mediterranean restaurant expected to open at the end of this month.
The White Fox, owned by Niko Regas, will be settling in at the former Big Sky Grill located next to Narrow Gauge Cinemas. The building is owned by John Moore, who will be leasing it to Regas. Although it will be his first time striking out on his own, Regas comes from a long line of cooks. The self-taught cook has most recently been working as the executive chef for Emilitsa in Portland- an upscale Greek restaurant owned by his uncle.
“I’ve come to realize over the years there are things that I grew up with that I don’t even have to think about now,” Regas said.
Things like always having tzatziki (a yogurt and fresh herb dipping sauce) in the refrigerator, or skordalia (a garlic puree) on the table.
“Greek is my niche,” he said.
The White Fox will feature many of Regas’ strengths as a Greek chef, such as roasted lamb and duck. Regas said he is still narrowing down the menu, but he plans to put the focus on street foods at first and work his way up to more elaborate meals. Menu items will range from $5 to $15, with some occasional higher priced specialties. Regas said he plans to put the nine taps and his extensive knowledge of wines to good use as well, offering a curated list of beverage offerings.
In addition to featuring local musicians every Friday night on the outdoor patio, Regas will also be highlighting the region’s agricultural strengths by using locally sourced food whenever possible.
“Being Mediterranean I’ll have to outsource some things. But anything I can source locally I will,” he said.

Greeks know how to run restaurants and are hard workers. Check out the Diners in NJ..Most of the owners are from Greece and retire as millionaires. And the Food is Great!

Mediterranean diet is based on Greek olive oil, vegetables, nuts, fruits and fish mainly. Not to be confused with middle eastern food. Totally different
